Dinner Day 1- Veg Pot Roast





This evenings special was the Vegetarian Pot Roast.

Alex (miss I dissected a chicken wing and will no longer eat meat)has but one regret in leaving her flesh and bone dinner options behind. Namely: Pot Roast.
Today I began our month long experiment with a peace offering: Beefless Pot Roast.

Ingredients:
Home Style Beefless Tips from Gardein ($5/package) (at Kroger)
Carrots
Potatoes
Onion Soup Mix
Garlic Cloves
2 Med. Onions

Cost: $8 for a family of four = $2/person
Served with a green salad

Family Approval Rating:
Alex: Ummmmm......tastes just like meat! Do it again!
Joseph: Thumbs up! How much did this cost?
Liam: Can you make this with meat next time? (to which Alex responded "just don't tell him"
Mom: This will work.

  1. yay....great idea! We do a "meatless Monday"...feeding 5 boys and a hubby on a "meatless" diet can sometimes be ...well, interesting... lol!
